The most challenging part of making that easy snack was to stop eating them in order to take a picture! Those chips are absolutely scrumptious, especially when still warm. I am honestly considering completely giving up on potato chips for the yuca kind. Yuca are a little harder to peel and cut than potatoes, but the end result makes that small amount of labor absolutely worth it!

Ingredients
- 1 yuca (increase quantity as needed)
- oil for frying
- salt
Directions
1. | peel the yuca and cut in slices using a sharp knife or mandolin. My mandolin was not strong enough to handle the yucca, so I used a knife instead. Try to get slices about 1/8 in (3 mm) wide or smaller |
2. | Put some oil in a skillet with high walls, and heat |
3. | Once the oil is hot, put the yucca slices in the oil one by one. Make sure that all the slices are completely inside the oil |
4. | Once the edges of the slices turn a golden brown, they are ready |
5. | Using a slotted spoon, remove them from the frying bath and place them on a paper towel in a plate |
6. | Sprinkle with salt |
7. | Enjoy! |

Ah I can’t stop eating them once I start! These little yuca crisps are a great snack and are definitively more flavorful than potato chips!
