As autumn is upon us and we long for the long hot summer nights, we need comfort food. In my case, comfort desserts! One of my personal favorites is a crumble… of course always with a twist!
Coconut crumble

Ingredients
- 1 Small mango or 2 apples (apples for pies)
- 100ml (rice flour or all-purpose gluten free flour)
- 100ml finely shredded coconut
- 100g melted butter
- 50g sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
Directions
1. | cut the mango or the apples in small pieces and put them in ramekins |
2. | mix the flour, coconut, sugar, butter, vanilla and cinnamon (and yes, you might need your fingers!) |
3. | spread the mix on top of the fruits in your ramekins |
4. | bake at 350 F for approximately 25 minutes, or until they get as brown as desired |
