I “bugged” my good friend Allen for a week before he sent me this plantain fry recipe. We were discussing food and he mentioned a quick recipe that he and his family make with plantains. It is just like the Indian kelewele, except the plantains used here are green ones, and therefore less sweet. It is fascinating to see how different cultures incorporate the spices they have available to add whimsical flavors to the basic fried plantains recipe. My friend’s recipe is very basic, but I found recipes with additional ingredients such as onion and garlic powder, grated coconut or ginger so if you find yourself wanting to add a few extra sprinkles from your pantry, feel free to do so.

Ingredients
- For two green plantains:
- ½ teaspoon red chilli powder,
- ¼ teaspoon black pepper powder,
- ½ teaspoon coriander powder (I used parsley flakes)
- ¼ teaspoon turmeric powder( or even less) and
- 1 teaspoon .vinegar or a tspn. of fresh lemon juice (for sourness/acidity
Directions
1. | Cut the plantains in thin slices |
2. | Sprinkle the various spices and add the lemon juice |
3. | Marinate and pan fry after about ½ an hour |
