Tan used to make the most amazing banana bread when we were in college. She added chocolate chips to the batter and suddenly, the classically flavored bread, became a much-treasured gem. This bread is moist and the chocolate blends effortlessly into the banana flavor. Try it for breakfast or as a snack with tea, those overripe bananas will have a wonderful destiny from now on.
Chocolate banana bread

Ingredients
- 3 or 4 ripe bananas, smashed (1 1/2)
- 1/3 cup melted butter
- 1 cup sugar ((can be reduced to 3/4 cup))
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1 pinch salt
- 1 and 1/2 cup all-purpose flour ((or 1 cup of all purpose-flour and 1/2 whole wheat flour))
- 1/2-3/4 cup chocolate chips
Directions
1. | No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. |
2. | Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. |
3. | Add the flour, mix. |
4. | Add the chocolate chips last. Pour mixture into a buttered 4x8 inch loaf pan. |
5. | Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve. |

You forgot the essential ingredient in the recipe which you highlight in the posting!!!
I was also expecting a chocolate something not a chocolate chip something.
How about trying to make real chocolate banana bread!!!
Add cocoa powder and/or melted chocolate (with the melted better) some instant expresso coffee flakes- tweaking the other measurements especially the butter and sugar.

Had some left over bananas, so tried Tan’s recipe. Really good.
Of course a third of a cup of butter helps (my regular recipe uses oil and yogurt) with the depth of flavor even omitting the cinnamon, nutmeg and cardamom I usually add.
There’s certainly room for experimentation keeping the basic banana-chocolate axis per my earlier comment.
And instead of butter or cream cheese, how about some p.b. spread on a hot toasted slice of Tan’s bread!!
