I could definitely say that I am making kale or collard greens with diced tomatoes, but it sounds so much cooler to say that I am making sukuma wiki. I just like the way it sounds and how swahili sounds in general: melodious yet crisp.
It means to “stretch the week”, probably because the dish is very simple and very cheap to make. This doesn’t come at the cost of flavor though and I may have been influenced by the name, but I was able to eat my sukuma wiki plain, as a side dish, mixed with eggs to make a yummy omelette, it was a very versatile base to a number of dishes. Plus, I got to say sukuma wiki, over and over again.
Sukuma wiki
Ingredients
- 1 bunch Sukuma (kale or collard greens) (chopped)
- 1 onion
- 1 tomato
- 2 tablespoons oil
- salt
Directions
1. | Heat up oil in a pot and add the onions |
2. | Stir well and saute for a bit |
3. | Add tomato and saute |
4. | Add sukuma and saute for a short time |
5. | Add 1/2 cup water and then salt to taste |
6. | Let the mixture simmer until the sukuma has reached a desired tenderness |
7. | Serve warm with ugali or chapati |
