Did I think St-Lucia was heaven because of the hot bakes or because the island truly is in a league of its own? One thing is sure, the hot bakes didn’t hurt. I had them every day I was there, and I could have had them for many more. Badgered in banana jam homemade at La Haut (recipe to come!), they made a really tasty breakfast and could definitely hold their own as a mid-afternoon snack as well.
Hot bakes Recipe
Ingredients
- 3 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 2 1/2 tablespoons baking powder
- 1/2 tablespoon salt
- 1 tablespoon butter
- 1/4 cup milk
- oil for frying
- water
Directions
1. | Pour flour into a large bowl add sugar, baking powder, butter and salt. Mix thoroughly. Add the milk and enough water to make a dough sticky to the touch. |
2. | Knead the dough. If it becomes too sticky, add a little flour to make it easier to handle. |
3. | When you are done kneading the dough, cover it and allow it to rise for at least half an hour. Heat up a frying pan over medium heat and then add some oil. Divide dough into small balls and flatten them to about ½ inches thick. |
4. | When the oil is hot (not smoking), place the balls of dough in your frying pan until one side turns golden brown and turn over to the other side for same results. |

OMG!!!! these are absolutely amazingly…..I just made these for my parents and i dinner…day are so soft and tasty…..ive been lookin for a recipe like this for years …jus couldnt seem to get these bakes right…..am from St.Vincent and the Grenadines..and I can’t wait to make these again..they are immediately my fav bake recipe…..they go so well with my fried fish and a specialty sauce I made…..my parents love them…
