How come something so simple be so delicious? The jam is flavorful, with just a hint of cinnamon, and the banana flavor is there, though not overpowering. I liked it so much when I tried it first, that I asked the staff and the owner of La Haut bed and breakfast in St Lucia if they could share the recipe with me. Thankfully for my “gourmand” self, they accepted. When I made the jam myself, it did not have the slight reddish color it had at the La Haut, but the taste was definitely there. I had some hot bakes handy and in a couple of spreads, here I was, back in heaven.
Banana jam Recipe
Ingredients
- 2 cups ripe bananas (mashed)
- 2 cups brown sugar
- 2 tablespoons lime juice
- bayleaf
- cinnamon
Directions
1. | Mix all ingredients together in a cooking pan and stir occasionally Let the jam boil for 5 minutes or until it turns brown. |
