Bananas are so ubiquitous everywhere that it is hard to imagine that they are native to the tropics and that, like pineapple and mangoes, grow best in warm climates. I have given a lot of attention to plantains and unintentionally neglected their smaller cousins. Time to fix this slight! I was looking for a recipe to use a couple of bananas I had home and came across this spice banana muffin recipe. One of my favorite spices is nutmeg and when I saw it in the list of ingredients, I was sold. The muffins came out moist and delicately flavored. The ginger comes out the most strongly and the other spices blend in the banana flavor to yield an inexplicably delightful outcome. Do you have some bananas handy? Banana spice muffins Recipe
Ingredients
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup butter
- 1 cup sugar
- 2 Large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 ripe bananas (mashed but still chunky)
Directions
1. | Combine flour, baking powder, salt, ginger, cinnamon and nutmeg in medium bowl. |
2. | Cream butter and sugar in large bowl until fluffy. |
3. | Beat in eggs one at a time, then milk and vanilla. |
4. | Blend in dry ingredients and bananas until just combined; do not overmix. |
5. | Spoon batter into greased muffin cups. Bake for 25 minutes at 400 F. |
