Smoked turkey and pumpkin seed soup

Ingredients
- 2 Small onions, one chopped and one whole
- 1 clove garlic, (crushed)
- 1 smoked turkey thigh (available by the meat counter), cut into pieces
- 1 1/2 cup of a smooth paste made with melon or pumpkin seeds (blend into a mixer with some water) or 1 cup of pre-made “egusi” grain also blended in a smooth paste
- 3 cups water
- 1/2 cup tomato paste
- 2 fresh tomatoes
- oil
- Salt, pepper, oregano, chili (to taste)
- 2 whole scotch bonnet peppers (to flavor the soup)
Directions
1. | Heat up oil in a pot over medium heat. Cook onions and garlic until fragrant |
2. | Add the turkey chunks (including the bones) |
3. | Add the water and bring to a boil. Mix in the tomato paste |
4. | Add the fresh tomatoes and whole onion and cook for 15 minutes |
5. | Make a homogeneous paste with the pumpkin seeds (grind the seeds with water in a blender) or, if available, use some pre-packaged powdered egusi also blended into a smooth paste |
6. | Add the smooth, almost creamy pumpkin seed paste to the pot. Mix well |
7. | Remove the cooked whole tomatoes and onion, puree them in a blender and add them back into the pot |
8. | Add the spices to taste and the whole peppers |

10. | Serve with white rice, attieke or foutou. |
