Beef stew in coriander sauce and beans Recipe

Ingredients
- 2lb beef (cubed)
- 2 Medium red onions (minced)
- 1 cube beef stock
- 2 tablespoons garlic (mashed)
- 3 tablespoons freshly squeezed lime juice
- 1 cup coriander leaves (mashed)
- 1 cup vegetable oil
- 1lb beans (soaked in water overnight)
- 1/5lb bacon
- 1 dark beer
- 1/2 cup whole milk
- 1 yellow chili pepper (seeded, deveined and finely chopped)
- 3 cloves garlic (chopped)
- salt, pepper and cumin to taste
For beans
- oregano
Directions
1. | Boil beans in cold unsalted water for 1 1/2 hours |
2. | In a separate pan, stir-fry bacon, chopped garlic, cumin, minced onion, salt and pepper, oregano and stir a few minutes until golden brown. Add to cooked beans, stir thoroughly, add milk, bring to a boil and keep warm |
3. | Pour oil into a large deep saucepan, add meat and stir-fry. Add mashed garlic, fresh chili pepper, minced onion, sat and pepper. Add beef bouillon dissolved in 1/2 cup hot water and beer |
4. | Boil until meat is tender, stirring from time to time. Add mashed coriander and lime juice just before serving. |
5. | Serve meat stew with beans and white rice |
