Cucur Udang

Ingredients

  • ~1/4 lb (100g) of fresh prawns
  • 1/2 cup cooked corn kernels
  • 100g (1 cup) of flour
  • 1/2 cup water
  • 1/2 teaspoon baking powder
  • 3 green onions thinly chopped
  • turmeric
  • 2-3 seeded red chili or a dash of red pepper flakes
  • 1/2 teaspoon salt
  • pepper to taste

Directions

1. Mix the flour, baking powder, water, salt and pepper until you obtain a smooth consistency

2. Add the corn, green onions, red pepper flakes and chopped prawns, and mix

3. Heat up about 1 cm of oil in a shallow pan. Drop a spoonful of the mixture in the oil once it’s hot. Be careful not to overcrowd the pan

4. Cook for about 2 minutes on each side, until golden brown

5. Remove with a slotted spoon and place on a paper towel to drain excess oil
