Plantain fritters Makala Recipe

Ingredients

  • 3 ripe plantains
  • 3 eggs
  • 3/8 cups brown sugar
  • 1 teaspoon vanilla extract
  • 2 1/3 cups flour
  • 2 teaspoons baking powder
  • 1 cup milk
  • nutmeg to taste

Directions

1. Peel the plantains, cut them in big chunks and cook in a pan half-filled with water for 10 minutes
2. Remove the plantain chunks from the pan and put them in a recipient filled with cold water to stop the cooking process. Strain and puree with a fork or potato masher
3. In another bowl, put the flour sifted with the baking powder and salt. Mix these dry ingredients and add the sugar
4. Beat the eggs, and add to the dry ingredients' bowl. Slowly incorporate the milk and mix well, until you get a smooth batter.
5. Add the plantain puree and nutmeg and let the batter rest for a few minutes.
6. Heat some frying oil in a pan. When the oil is hot, scoop small quantities of batter and place carefully in the oil. Do not overcrowd the pan. When the fritters take on a golden brown color, they are ready.
7. Drain on some absorbent paper and serve immediately, sprinkled with confectioners' sugar.
