Plantain fritters Makala Recipe
Ingredients
- 3 ripe plantains
- 3 eggs
- 3/8 cups brown sugar
- 1 teaspoon vanilla extract
- 2 1/3 cups flour
- 2 teaspoons baking powder
- 1 cup milk
- nutmeg to taste
Directions
1. | Peel the plantains, cut them in big chunks and cook in a pan half-filled with water for 10 minutes |
2. | Remove the plantain chunks from the pan and put them in a recipient filled with cold water to stop the cooking process. Strain and puree with a fork or potato masher |
3. | In another bowl, put the flour sifted with the baking powder and salt. Mix these dry ingredients and add the sugar |
4. | Beat the eggs, and add to the dry ingredients' bowl. Slowly incorporate the milk and mix well, until you get a smooth batter. |
5. | Add the plantain puree and nutmeg and let the batter rest for a few minutes. |
6. | Heat some frying oil in a pan. When the oil is hot, scoop small quantities of batter and place carefully in the oil. Do not overcrowd the pan. When the fritters take on a golden brown color, they are ready. |
7. | Drain on some absorbent paper and serve immediately, sprinkled with confectioners' sugar. |
