Poulet yassa Recipe

Ingredients

  • 4 pieces of chicken (can be a mix of legs, thigh, and breast)
  • 2 onions
  • juice of one lemon (~3 Tbsp)
  • juice of one lime (~3 Tbsp)
  • salt
  • pepper
  • 1 spicy pepper (Jamaican) (optional)
  • 2.5 tablespoons Dijon mustard
  • 1 clove of garlic

Directions

1. Cut the onions in thin slivers and place them in a big bowl
2. Add the diced garlic, mustard, juice of the lemon and lime, and some salt.
3. To the bowls containing the onions, add the chicken, and let marinade for at least 1h.
4. Bake the chicken in the oven, or cook it on a grill.
5. While the chicken is cooking, cook the onions and marinade in a cast iron skillet or other heavy bottom pan. Continuously stir the onions so they don't burn, and cook the marinade down until most of of the liquid is absorbed.
6. Once the chicken is fully cooked, add it to the marinade.
Serve with white rice.
