Sugar-free Plantain Bread Recipe

Ingredients
- 1 cup mashed ripe plantain (180 g)
- 1/2 bar butter (~ 60 g)
- 1 1/4 flour (~150 g)
- 2 eggs
- 1 teaspoon baking soda
- 4 tablespoons sour cream (I used yogurt instead)
- 1 teaspoon vanilla
- 1 teaspoon baking powder
Directions
1. | Beat margarine until soft; add sugar, eggs and yoghurt. |
2. | Blend plantains, flour, baking soda and baking powder. Add them to the previous mixture. Add the vanilla and beat thoroughly. |
3. | Pour the mixture into a greased and floured pan ( or small individual muffin or madeleine pans) |
4. | Bake in a preheated oven at 350 degrees for about an hour. Check with a wooden toothpick. When it comes out dry, the bread is done. |
